A good grape is juicy, sweet (with just a touch of tartness), and firm. Once a grape starts to get mushy, it becomes a bad grape. Usually I deal with bad grapes by roasting them, but that maneuver is less appealing in the summer months, especially when you can firm them up in the freezer.
